Mail, log and STMP

I have a problem with Redmine after we have changed ISP I have to change the emailresponder address as well.
Our our ISP has a a bit different setup. Port 587 and authenticifation when sending.
This I have changed in /config/environment.rb without success. I have looked in production.log but this does not log mailevents.
Question is, how do I log this situation, I want to see the errormessage comming from ISP amongst other things.
Having the ISP looking in their logs >> Not bloody likely. :-)
Any ideas?
