where the method used on .html.erb template definded?

hello,everyone.I'm a new developer of rails,when I browse the Redmine-1.3 source code.I have a question.In the view template(eg:xxx.html.erb),I find some method,for example call_hook() and so on.I do not know,where the method definded? anyone can tell me? I want to know how to use this method too.thank you.
