Redmine randomly fails to start properly

Hi All,
I've just set up Redmine according to the guide on the Redmine wiki under Apache with FastCGI.
Every so often (quite frequently at the moment actually) the server lags severely and I get the following message in my browser:
Application error Rails application failed to start properly
The following shows up in my apache error log:

This is really frustrating because our company is going to start relying on redmine to process bug reports etc..
Can anyone point me in the right direction/tell me what might be up? I've spent a while on Google looking for the answer but to no avail.
