Modify the name of the issue lists

I am just a newplayer for Redmine software and ruby programme. However, I want to know how can I replace "Due date" to "Target End Time" on the issue list. Thanks!

You can do this by changing the used language-files to change the translation of field_due_date from (in your case) "Due date" to "Target End Time".
For example, if you only want to change this in the English language only: source:/trunk/config/locales/en.yml#L190.
