Odd HTML Rendering Issue Redmine 1.2

Spent the past few hours looking in vain into this issue I have after upgrading to 1.2. I had 1.1.2 installed fine and working well, but decided to upgrade and unfortunately it has resulted in some unwanted funky behavior:

Just some example pages to see what I mean. I have this installation setup on a cPanel VPS:
- ruby -v
ruby 1.8.7 (2009-06-12 patchlevel 174) [i686-linux]
- rails -v
Rails 2.3.11
