TCPDF RFPDF customization in Redmine 1.3.1

Hi,
I love the wiki functionality in Redmine and the "export as pdf" function, however I would like to customize the output pdf including for instance my name and surname in the pdf.
I have been able to create a good looking template with TCPDF however I cannot see where it is in Redmine and where to extend the classes Header() and Footer() of TCPDF in Redmine.
Help is appreciated.
