Have you tried the Bitnami Stack?

When I was having trouble getting CentOS working, I gave it a try.

Worked a treat!

I've tried it but it failed as well. I contacted Bitnami and they asked me to try one more time doing one thing different but haven't had a chance yet. Problem is I'm so slammed I barely have time to do it and I'm so slammed that i'm losing valuable time by not having it :/

If it were me then I would either:

1) Load VMware or VirtualBox on the Mac and use a Bitnami VM stack

2) Build a cloud version on AWS/Bitnami cloud hosting. Once you have an AWS account it is only a matter of minutes to have a Redmine instance up and running.
