Updated workflow - Status showing that are not in workflow?

Every time I post to the forum I'm usually missing something painfully obvious so apologies in advance.

I had an existing workflow in place but we recently wanted to add a new status to help our process. I added "Ready for Demo" between "In Progress" and "QA Ready". See screenshots. Why do tickets have extra options in the status? For instance, "In Progress" tickets should have 4 options, "New" and "Ready for Demo", etc. but there are additional options "Resolved", "QA Ready"

QA Ready tickets should only have "In Progress" and "UAT Ready" for the options yet there is also "Ready", "Resolved" and "Info Needed"

Do I need to do anything after updating the work flow for existing projects or issues?
