Who can explain the issue property Category?

Dear Redmine community,
I have searched this website and did not find yet an explanation of the property Category of an Issue and the distinction to the property Tracker.
I would very much appreciate someone describing
- Definition of the Category property,
- Best Practice,
- Distinction to Tracker property and
- everything else that comes into your mind about the Category property.
