Issues display New state only

Hi all.
I'm evaluating Redmine and I'm using it for the first time.
I'm encountering a problem with issue states: when I start a new issue, whichever the tracker I'm using, only the "new" state shows in the drop down list. After an Issue is created there's no way to change state: "New" appear as a label, even if I expand the properties to modify them all.
Any help?

The only hint I can give (I'm not sure it applies anyhow) is that before doing what follows the issues states worked.

I've toyed with states and workflows, adding one new state ("Recorded") and I've set it as a default state and also a closed state. My intention was to use it in a new tracker (Recordings) just for recording project events (like meetings). I even created a new workflow for the new tracker with no transitions allowed.

As I soon discovered, my smart move made every new issue created in the final "recorded" state, whichever the tracker I was using.
So I promptly modified the recorded state, deleting the "default" flag. Then I restored the "default" flag for the "New" state. And last I modified the workflow for Recordings tracker, allowing transition from New state to Recorded.

Now every issue (whichever the Tracker you choose) is again started with "New" state. But, as written above, now every Issue (even those created before my toying with the states) is stuck on the "New" state.

What can I do? I'm not worried for my tests. I'm worried about using Redmine in real "production". If I cannot solve this point and/or if I'm not able to understand how it happened, probably Redmine is not suited to my needs?

Please if anyone has any idea let me know, because Redmine seems so promising!!!

If it matters, I tell you I'm using Redmine 1.1.1, with PostgreSQL, mongrel_rails, within a Windows XP.

You must be a member of the project you create the issue in to be able to set it to anything else than the default status, or you have to extend the issue workflow for the correct tracker(s) to allow non-members to change them. Being admin doesn't help as admins are bound to the workflow too.
