custom field. From of the mail.

I had a redmine. I had put than unknown user can create issues whith unknown_user=accept no_permission_check=1
But when the issue is create I want to see the email from. I am thinking in creating a Personalized field to put this. But ¿how do I have to say the sistem that is the from of the email??
